Easy Scrambled Eggs in a Mug (Even a Kid Could Do it!)
You know how they say necessity is the mother of invention? While we were on spring break visiting my sister in Virginia (I know that was forever ago already!) my niece wanted some scrambled eggs. But my sister was busy getting something else ready and she didn’t have time to stand over the stove as a short order cook. So I helped my niece make some easy microwaved scramble eggs. So easy even a kid could do it! I know I haven’t done a food post before but I thought I owed it to all you Moms out there that need a chance to sleep in without having to get up to make the kids breakfast. Teach them how to scramble eggs in the microwave and you get a few more minutes in bed!
Crack 2 or 3 eggs in a microwave safe mug.
Break up yolks and give them a little whisk with a fork. Cheesy addition alert! If you want to make your scrambled eggs in a mug cheesy add a little shredded cheese or crumbled feta, whatever you like, to your eggs and stir it in now.
Microwaves vary but I have found that microwaving on high for about 1 minutes seems to do the trick. The eggs come out fluffy and ready to eat. See? So easy! You can show your kids how to make these and they can do this on their own very easily. Plus, consider adding protein powder to the mix for an extra nutritional boost.
